VANILLA BRAZIL NUT MILK (WITH CHIA SEEDS)

Brazil nuts are one of the best sources of selenium, a mineral that is otherwise hard to come by naturally.  Selenium is like the rebar on a high rise-ti's the reinforcement for most of the body's most powerful antioxidants.  The coconut butter isn't essential, but, it's a healthy addition that provides flavor and richness.  The lecithin gives the milk extract a creamy smoothness.

I add 2 teaspoons of Chia Seeds to my glass before drinking for an extra super-food punch!


1 cup of raw Brazil nuts, soaked for 2 hours or overnight
4 cups filtered water
1/4 cup agave nectar or raw honey
2 tablespoons coconut butter
1 tablespoon vanilla
1 tablespoon lecithin (optional)
2 packets Stevia
pinch of sea salt

In a Vita-Mix or high speed blender, blend the nuts and water on high speed until smooth (about 2 minutes).  Strain the milk through a nut-bag or multiple layers of cheese cloths twice for smoothness (see my blog post about how I do it through the cheesecloth.)   Rinse the blender cup and place the milk back in with the remaining ingredients.  Blend to combine thoroughly, and taste for sweetness.

Variations:
 
For Chocolate MIlk - add 3 heaping tablespoons of organic cocoa powder or carob powder, plus an additional packed of Stevia or tablespoon of agave.

For Strawberry Milk - add about 1 pint of strawberries, plus an additional packet of Stevia or tablespoon of agave.
